White Labs Specialty/Belgian yeast strains are used to produce yeast forward beers such as German Wheat, Belgium Wit, Trappist and Abbey style ales, and Belgium Saisons. These specialty strains produce strong ester and phenols such as banana, clove and plum along with some peppery and spicy notes depending on yeast selected. The level of these flavors and aromas can be restrained by fermenting at the low end of the recommended fermentation temperatures. For more pronounced characteristics, ferment at the higher end of the recommended temperatures.
