White Labs Clarity Ferm
Clarity Ferm from White Labs is an enzyme that reduces chill haze in beer. Chill haze in beer results from the precipitation of complex polyphenols and proteins during cold storage. Clarity Ferm will prevent this precipitation from occurring while having no effect on head retention, nor will it alter flavor or aroma.
In addition to eliminating chill haze, Clarity Ferm significantly reduces the gluten content in beers made with barley and wheat. A Clarity-Ferm treated beer made from barley or wheat usually tests below 20 ppm of gluten, the current international standard for gluten free.
Add one vial of Clarity Ferm to 5-7 gallons of cooled wort at the same time as pitching yeast.
