White Labs Ale Yeast

Yeast Cells  Ale yeast is referred to as a top fermenting yeast due to the fact that a thick creamy head forms at the top of the fermenter during active fermentation. Most ale strains are best used in the range of 58 to 72°F with fermentation at the lower range producing clean lager type beers and those fermented at the higher range producing more esters. These esters are generally fruity flavors such as pear or in the case of wheat yeast clove and banana. Esters are an important character in ales when present in a balanced nature.
